After living in Mexico the last couple of years, and eating the best tacos of our lives here, my children requested Taco Bell tacos for dinner tonight because they miss American-style tacos. I’m so embarrassed. But it’s been a crazy quarantine and who knows how long it will be before we can safely return to the land of Taco Bell, so I decided to grant their request. However, I can’t find hard-shell tacos here, so it wasn’t exactly the same. Luckily, I have some American taco seasoning that I brought to Mexico with us, so the meat tasted similar. I cobbled together an American-style taco dinner and it’s better than Taco Bell, in my humble opinion. Eat your heart out Taco Bell! The chimichurri sauce on top made this phenomenal! I can only hope that when my kids finally eat Taco Bell again, they will realize that Mexico really does have the best tacos.
